Tyohara Utsav – Tender Coconut Pudding

Tender Coconut Pudding (Elaneer/Karikku Pudding/???????????????)
Kerala is the land of coconuts and Elaneer/Tender coconut water is the health drink of Kerala and really nutritious. Tender coconut pudding is the most popular pudding of Kerala and it is prepared using coconut pulp, coconut water, china grass and milk. Enjoy this easy and yummy dessert.
Ingredients
Tender Coconut as required
Condensed Milk (I used milkmaid) – 1 tin
Tender Coconut water- 1 tin (used the same condensed milk tin)
China Grass(Agar Agar) – 12-13gms
Water- 1 tin
Milk – 1 litre
Coconut pulp(to garnish) –1 cup (cut into bits)
Sugar – 3-4tbsp(as per your taste)
Preparation
- Scoop out the pulp from the tender coconuts, remove any brown skin if mixed with the pulp and cut it into bits with a knife.
- Soak china grass in water for about 10 minutes and boil on low flame till it dissolves completely. Remove from fire.
- Heat a pan and boil milk, condensed milk and the required amount of sugar. Switch off the flame once boiled over.
- Add melted china grass mix to the boiled milk mix and stir well. While adding china grass mix to milk, both should be the same temperature, else it will curdle.
- Now add the coconut water to the milk and china grass mixture and mix well. Now strain through a sieve.
- Transfer the mix into a flat dish and add the coconut flesh to garnish. Allow it to cool at room temperature for 10 minutes (by that time the pudding will thicken) and then refrigerate.
- Cut into desired shapes and serve chilled in small bowls.
